Curried Bean Pasta

Ingredients:

  • 150 gm pasta
  • 1/2 cup boiled rajma (kidney beans)
  • 1/2 cup onions, chopped
  • 2 tsp chopped garlic
  • 1/2 cup chopped tomatoes
  • Few chopped basil leaves
  • 1 tsp oregano

Method:

  1. Cook the Pasta:
    • Boil the pasta according to the instructions on the pack. Drain and set aside.
  1. Prepare the Sauce:
    • Sauté the chopped onions and garlic until they become translucent.
    • Add the chopped basil leaves and oregano. Mix well to combine the flavours.
  2. Add Tomatoes:
    • Add the chopped tomatoes to the pan.
    • Mix well. Cook until the tomatoes soften and blend into the sauce.
  3. Incorporate Beans:
    • Add a splash of water to the pan and let it cook for a few minutes to create a slightly saucy consistency.
    • Add the boiled rajma (kidney beans) and mix well.
  4. Combine Pasta and Sauce:
    • Add the boiled pasta to the pan and stir everything together until the pasta is well coated with the sauce.
  5. Garnish and Serve:
    • Garnish with additional basil leaves and oregano
    • Serve warm and enjoy your curried bean pasta!
