Ingredients: 150 gm upma mix 300 ml water 1 tsp rai (mustard seeds) Handful of curry leaves 1/2 cup chopped onion 1/2 cup chopped carrots 1/3 cup peas Method: Prepare the Tempering: Add 1 tsp rai (mustard seeds) and let them splutter. Add the chopped onion, cashews and curry leaves. Sauté until the onions turn translucent. Cook the Vegetables: Add the chopped carrots and peas to the pan. Pour in 300 ml of water. Cook for 4-5 minutes until the vegetables are tender. Prepare the Upma: Add 150 gm of upma mix to the pan. Stir well to combine the mix with the vegetables and water. Cook until the mixture absorbs all the water and reaches a thick, porridge-like consistency. Serve: Serve the upma hot. Optionally, you can serve it with chutney on the side.
