Ingredients: 3 tbsp moong dal khichdi mix ½ cup water (for cooking spinach) 5-6 spinach leaves ¼ tsp cumin powder ½ cup water (for cooking khichdi) Steps: Prepare the Spinach: In a saucepan, bring ½ cup of water to a simmer. Add the spinach leaves and cook for 3-4 minutes until wilted and tender. Remove the spinach from the water and set aside. Cook the Khichdi: In the same saucepan, add another ½ cup of water and bring it to a boil. Add 3 tablespoons of moong dal khichdi mix into the boiling water. Stir continuously with a fork to ensure there are no lumps and the mix is well incorporated. Add ¼ teaspoon of cumin powder and the cooked spinach leaves. Reduce the heat to medium and cook the mixture for 3-5 minutes, stirring continuously. The khichdi should thicken and reach a porridge-like consistency. Serve: Once cooked, remove from heat. Serve the khichdi warm as a wholesome and nutritious meal.
