Moong Dal Khichdi with Palak

Ingredients:

  • 3 tbsp moong dal khichdi mix
  • ½ cup water (for cooking spinach)
  • 5-6 spinach leaves
  • ¼ tsp cumin powder
  • ½ cup water (for cooking khichdi)

Steps:

  1. Prepare the Spinach:
    • In a saucepan, bring ½ cup of water to a simmer.
    • Add the spinach leaves and cook for 3-4 minutes until wilted and tender.
    • Remove the spinach from the water and set aside.
  2. Cook the Khichdi:
    • In the same saucepan, add another ½ cup of water and bring it to a boil.
    • Add 3 tablespoons of moong dal khichdi mix into the boiling water.
    • Stir continuously with a fork to ensure there are no lumps and the mix is well incorporated.
    • Add ¼ teaspoon of cumin powder and the cooked spinach leaves.
    • Reduce the heat to medium and cook the mixture for 3-5 minutes, stirring continuously.
    • The khichdi should thicken and reach a porridge-like consistency.
  3. Serve:
    • Once cooked, remove from heat.
    • Serve the khichdi warm as a wholesome and nutritious meal.
