Ingredients:
- 3 tbsp moong dal khichdi mix
- ½ cup water (for cooking spinach)
- 5-6 spinach leaves
- ¼ tsp cumin powder
- ½ cup water (for cooking khichdi)
Steps:
- Prepare the Spinach:
- In a saucepan, bring ½ cup of water to a simmer.
- Add the spinach leaves and cook for 3-4 minutes until wilted and tender.
- Remove the spinach from the water and set aside.
- Cook the Khichdi:
- In the same saucepan, add another ½ cup of water and bring it to a boil.
- Add 3 tablespoons of moong dal khichdi mix into the boiling water.
- Stir continuously with a fork to ensure there are no lumps and the mix is well incorporated.
- Add ¼ teaspoon of cumin powder and the cooked spinach leaves.
- Reduce the heat to medium and cook the mixture for 3-5 minutes, stirring continuously.
- The khichdi should thicken and reach a porridge-like consistency.
- Serve:
- Once cooked, remove from heat.
- Serve the khichdi warm as a wholesome and nutritious meal.
