Ingredients:
For Rainbow Veggie Puree:
- 1 cup mixed veggies (such as beetroot, pumpkin, carrot, peas, brinjal, cauliflower)
- 1/4 cup water
For Khichdi:
- 1/2 cup water
- 3 tbsp moong dal khichdi mix
Steps:
Prepare Rainbow Veggie Puree:
- Chop Veggies:
- Chop the mixed veggies into small pieces until you have approximately 1 cup of mixed vegetables.
- Sauté Veggies:
- Add the chopped veggies to the pan and sauté for a few minutes until they begin to soften.
- Cook Veggies:
- Pour in 1/4 cup of water to help steam and cook the veggies further.
- Continue cooking until the veggies are completely tender and cooked through.
- Remove from heat and let cool slightly.
- Blend Veggies:
- Transfer the cooked veggies to a blender or food processor.
- Blend until smooth to create your rainbow veggie puree. Set aside.
Prepare Khichdi Base:
- Mix Khichdi:
- In another saucepan, add 1/2 cup of water.
- Add 3 tablespoons of moong dal khichdi mix into the water.
- Use a fork to mix and break up any lumps until well combined.
- Cook Khichdi:
- Place the saucepan over medium heat and cook the khichdi mixture for 3-5 minutes, stirring continuously.
Combine Veggie Puree with Khichdi:
- Add Puree:
- Once the khichdi reaches a porridge-like consistency and is cooked through, add the prepared rainbow veggie puree to the saucepan.
- Stir well to combine the veggie puree with the khichdi mixture.
- Final Cook:
- Cook for another minute to allow the flavors to meld together.
- Remove from heat and let the mixture cool to room temperature.
Serve:
- Serve the rainbow veggie khichdi warm as a wholesome and nutritious meal for your little one.
