Moong Dal Khichdi with Rainbow Veggies Porridge

Ingredients:

For Rainbow Veggie Puree:

  • 1 cup mixed veggies (such as beetroot, pumpkin, carrot, peas, brinjal, cauliflower)
  • 1/4 cup water

For Khichdi:

  • 1/2 cup water
  • 3 tbsp moong dal khichdi mix

Steps:

Prepare Rainbow Veggie Puree:

  1. Chop Veggies:
    • Chop the mixed veggies into small pieces until you have approximately 1 cup of mixed vegetables.
  2. Sauté Veggies:
    • Add the chopped veggies to the pan and sauté for a few minutes until they begin to soften.
  3. Cook Veggies:
    • Pour in 1/4 cup of water to help steam and cook the veggies further.
    • Continue cooking until the veggies are completely tender and cooked through.
    • Remove from heat and let cool slightly.
  4. Blend Veggies:
    • Transfer the cooked veggies to a blender or food processor.
    • Blend until smooth to create your rainbow veggie puree. Set aside.

Prepare Khichdi Base:

  1. Mix Khichdi:
    • In another saucepan, add 1/2 cup of water.
    • Add 3 tablespoons of moong dal khichdi mix into the water.
    • Use a fork to mix and break up any lumps until well combined.
  2. Cook Khichdi:
    • Place the saucepan over medium heat and cook the khichdi mixture for 3-5 minutes, stirring continuously.

Combine Veggie Puree with Khichdi:

  1. Add Puree:
    • Once the khichdi reaches a porridge-like consistency and is cooked through, add the prepared rainbow veggie puree to the saucepan.
    • Stir well to combine the veggie puree with the khichdi mixture.
  2. Final Cook:
    • Cook for another minute to allow the flavors to meld together.
    • Remove from heat and let the mixture cool to room temperature.

Serve:

  • Serve the rainbow veggie khichdi warm as a wholesome and nutritious meal for your little one.
